Canederli dumplings in Egna
The signature dish of South Tyrol: at Da Candido canederli (Knödel) in broth or dry, with melted butter and cheese, as tradition demands.
How we make them
Stale bread, eggs, milk and a flavour that changes: speck, cheese, spinach. In hot broth in winter, dry with butter and parmesan all year round.

Canederli are part of our South Tyrolean dishes: ask the staff which ones are on today.
